Veggies with Every Meal!!??

Veggies Are Delicious!

If you had made that statement to me 20 years ago, I would have countered with a big, “NO THEY AREN’T!!” I was so wrong…

Growing up, I detested eating vegetables.  My parents literally had to force me to eat them and it wasn’t until I reached college, got out of my food comfort zone and started trying new things that I realize eating my veggies wasn’t that bad!  In all actuality, they were pretty tasty if prepared correctly.  Once I overcame thinking that vegetables were gross, I began figuring out different ways to cook so that they were as flavorful and delicious as possible.  Now first, let’s establish a few ground rules that I always follow when buying veggies or creating meals, salads, etc:

My Guide to Veggies

1.  Buy fresh and organic.  If you have a local farmer’s market, I suggest purchasing there because farm to table is not only healthier, but it tastes better too!

2.  If you must, buy frozen…stay away from canned veggies unless absolutely necessary.  Frozen is the next best thing to buying from a farmer’s market.  They are picked at their peak of ripeness and frozen immediately, so you still get much of the nutrients you should be looking for.  Plus canned veggies can have not so obvious added sugars and sodium.

3.  Eat veggies raw as much as possible.  Salads, broccoli, carrots, celery, green onions and many other veggies are delicious raw! It’s good for you so why not? Here is a starting point for researching the benefits of eating your veggies raw.

4.  Steam or roast instead of boiling!!

5.  Eat some sort of veggie with every meal (or fruit during breakfast).

6.  Spice them up!  There are so many different herbs, spices, blends, olive oil and BUTTER (REAL BUTTER) that enhance the flavor of veggies.  When buying the spice blends, just read the label and make sure there is nothing there you can’t pronounce.  And NO MSG!

7.  Don’t overcook…I like my veggies a little crunchy, plus it means you aren’t cooking as much of the nutrients out!

Strawberry Spinach Salad

veggies_every_mealA bundle of fresh, organic Baby Spinach (this is also good with Kale)
A cup of quartered, fresh organic strawberries
2 Tablespoons of Balsamic Vinaigrette (a sweet vinaigrette works well too)
1/8 cup of crumbled Feta Cheese (optional)

Rinse fruit and veggies.  Quarter strawberries, set to the side.  Dry spinach as much as possible with a spinner or pat dry with paper towel.

In a large bowl, combine spinach and the balsamic vinaigrette.  Stir to evenly coat.  Top with strawberries and feta cheese.

Some people add more bells and whistles like nuts or granola when eating the salad as a meal, but I tend to like my salads super simple as a side.  Another little tidbit is I really do not care for salad dressing much, so I tend to go super light with it.
