Spicy Tomato Chicken

Flavorful &  Spicy Baked Tomato Chicken

Baked chicken is one of my favorite meals (it seems as if everything is my favorite, haha) so over the years I have developed quite the number of recipes to vary up my dinner selection!  One of the most flavorful is this Spicy Tomato Chicken recipe that is extraordinarily easy and beyond delicious!  I love a one dish meal where you throw everything into a pan or pot and just let it cook.  My evenings are usually jam packed with other things besides being in the kitchen and it can be challenging to be able to spend more than 20 or 30 minutes making a meal, so this recipe allows me to throw something together in minutes and walk away for a few hours while it slowly bakes, then come back to a satisfying meal.

For this easy baked chicken recipe, you will need:

4 Bone in Skinless Chicken Thighs
1 small onion (chopped)
1 bell pepper (chopped)
1 small tomato (chopped)
1 can of Fire Roasted Tomatoes and Green Chilies
salt (to taste)
pepper (to taste)
Cayenne Pepper (to taste)
3 cloves of garlic (minced)
Sazon Goya – Cilantro and Tomato (2 packs, one pack sprinkled over each side of chicken)
2 cups of prepared rice for side

If you have more than a few mouths to feed, I suggest doubling your chicken to 8 thighs and putting two tomatoes in with a large onion and bell pepper.  One can of the tomatoes and green chilies will still be sufficient.

Also, if you prefer white meat, you can always sub chicken breasts or any other chicken cut you like.  I like the thighs for this recipe!

Remove the skin from chicken thighs (if needed), place chicken in a cast iron skillet and season liberally with salt, pepper, and Goya seasoning. Then lightly mist your Cayenne pepper… don’t get too carried away!!!  It’s HOT!  Make sure to season BOTH sides of the chicken, so season and turn over, season again.  Place garlic, onions, bell pepper, tomato and can of diced tomatoes and green chiles over chicken. Cover with foil and bake for 2 hours at 375 degrees.

Serve with any type of rice you desire.

  2. I made this in a dutch oven which only took half the time. I used boneless skinless thighs. Very very wonderful! Love you
