Outrageous Lemon Butter Cookies

Several years ago, I found a Gooey Butter Cookie recipe online that was so delicious, I was determined to make as many different flavors of cookies I could come up with (which I will be featuring in coming blogs).  Since this recipe uses a cake mix, you can really vary the flavors!  Some of my Facebook friends may have seen the pictures during my “experiments” and a lucky few friends and family actually tried them!  One of my favorites from these experimentations is the Lemon Butter Cookies.

lemon_butter_cookiesThese lemon cookies are moist, packed with an amazing lemony kick and are just extraordinarily tasty!  The best part is that the recipe is about as simple as you can get when baking.  I am one that loves to cook from scratch, however ever so often, I’ll take a few shortcuts as long as the end product still tastes magnificent.  These lemon butter cookies are light, fluffy and a real treat!

The cookies are great for parties, BBQs, family gatherings, and even homemade gifts. Plus, they taste like they are completely from scratch.  It may be because I add in little extras like lemon zest and fresh lemon juice which makes a huge difference in the flavor!  I am a flavor junkie… the more flavor, the happier I am!   And please, no imitation lemon flavoring, use the REAL stuff!

Lemon Butter Cookie Ingredients:

8 ounces of softened cream cheese
1/2 cup softened butter
1 egg
1 teaspoon of vanilla extract
18.25 ounce box of Duncan Hines Moist Deluxe Lemon Supreme Cake Mix
1 tablespoon of lemon zest
1 tablespoon of fresh squeezed lemon juice
1/4 cup confectioners’ sugar (to sprinkle on top when finished)


Mix all ingredients together in a medium sized mixing bowl until fully incorporated.
Roll dough into balls and place on a cookie sheet. (non-stick, use baking spray or do it the old fashioned way with butter and flour)
Refrigerate for 30 minutes.
While cookies are getting their chill on…preheat oven to 350 degrees F.
Cook for 10 to 13 minutes and remove from baking sheet to cool.
Sprinkle Confectioners Sugar with a sifter over the top of the cookies.

And that is it!!! It’s really THAT simple.  Let me know how delicious they were!

*TIP: If you really want to sweeten them up, top with your favorite lemon frosting!
