Outdoor Lunch – Swiss Cheese Burgers

As “grilling season” winds it’s way down, I want to ensure I make use of the grill as much as possible!  Lucky for me… Southern California allows for an extended “summertime” and I will enjoy warm, sunny weather well into October!

Zik and I were working away on the computer mid-day when I realized it was lunch time and the day was so beautiful that I wanted to be outside!  I checked what I had in stock in the kitchen and my eyes set on the hamburger meat and instantly visions of burgers on the grill filled my mind! Also, lying out in the sun and catching some rays also sounded like the perfect lunch break!

As I gazed into my fridge, I noted I had leftover sliced onion, fresh green leafy spinach and Swiss cheese slices.  Since the burger idea was last minute, I didn’t have burger buns but I did have Kaiser Rolls with Sesame Seeds on top.  PERFECTO! I decided to grill my onions and top the meat patties with melty Swiss cheese, the leafy spinach and sandwich them between the Kaiser Rolls that I planned on heating on the grill.  After combining my favorite seasonings into my ground beef (80/20 ratio of beef to fat is perfect for grilling in my opinion) and gathering all of my ingredients to build my burgers outside, I threw on my swimsuit and sunglasses, put on my chef hat (figuratively) and heated up the grill.  Below is a little pic of me building the burgers rooftop!  Zik snapped away without my realizing it, he’s fond of catching me off guard like that!  Notice the intense look of concentration…

Grilled Swiss Cheese Burgers Recipe

grilled_swiss_cheese_burgers1.5 pounds of ground beef
6 Sesame Seed Kaiser Rolls
1 Bundle of Green Leafy Spinach
1 Sliced Small Onion
(Red, White, Yellow… it’s your choice)
6 Slices of Thick Cut Swiss Cheese
Fixings
(Mustard, Mayo, Ketchup or whatever you like to top off your burgers with)
2 Tablespoons of Worcestershire Sauce
2 Tablespoons of Zatarain’s Creole Seasoning
1 Tablespoon of Salt
1 1/2 Tablespoons of Ground Black Pepper
2 cloves of Fresh Minced Garlic
Softened butter
A little tin foil

*Keep in mind the seasoning amounts are to taste… I like my meat WELL seasoned!

Preheat your grill!!!  Using charcoal?… let it get nice and hot for AT LEAST 15 minutes, gas grills about 10 minutes.

Combine your beef, Worcestershire sauce, Zatarain’s Creole seasoning, salt, pepper and garlic.  Form beef into Quarter Pound patties.

Cut Kaiser Rolls in half and spread a thin layer of butter on each piece.

Gather all ingredients and make your way to your grilling area!

Place piece of tin foil on grill. You will use this to grill your onions so they don’t fall through the grate!  I put my onions on the grill first because I like them to cook for a while.  I like my grilled onions nice, soft and charred.

Once your onions have cooked for a few minutes, place your beef patties on the grill.  I put mine directly over the fire (which should be sent on medium heat) because I like my burgers charred too!  You should cook them approximately 5 minutes on each side.

A few minutes before your burgers are finished, take your buttered rolls and place them over INDIRECT heat, meaning, do not place over the fire.  If your grill has an additional wrack above the main grilling area, that is perfect for heating your buns.  If not, place them around the outer edge of the grill away from the flames.  Heat until they are a little toasted!

When the burgers are almost done, top with your Swiss cheese slices.  Let the cheese melt completely, then top the patties with your grilled onions!

I brought my big cutting board outside so I would have a place to put everything together.  I layed out my buns, coated one with Mayo (for Zik) and the other with mustard (MINE)!  I like coating both sides of the bun with whatever condiment(s) you like just to ensure maximum flavor!  Next I placed my meat with melted Swiss cheese and onions on the toasted roll and placed a handful of spinach on each burger.  Simple, delicious and soooo easy to make!!!

Get your grill on while you still can!!
