Fresh Spinach and Broccoli with Bacon!

Leafy Green Spinach & Broccoli w/ Bacon bits!

As a child… I hated to eat my veggies especially spinach and broccoli.  You couldn’t PAY me to eat any of the vegetables that were put on my plate, except maybe green beans and romaine lettuce.  It wasn’t until my late teens that I realized veggies were not all that bad!

In my quest to make vegetables taste good, I have created some amazing mixes that not only adults will love, but you may be able to get your picky kids to eat too!

Buy organic spinach and broccoli!!!  For this recipe, you will need:

1 bunch of broccoli
2 strips of thick cut bacon
4 Tablespoons of butter
1 teaspoon of sugar
Salt & Pepper to taste

This recipe is so simple and quick and tastes absolutely delicious.  First, you prepare your fresh, leafy green spinach.  Wash them, trim to just keep the leaves for cooking.

Next, wash and cut up your broccoli.  Set the veggies aside to dry .

Heat your pan on medium and cook your bacon.  Once the bacon is fully cooked ( I recommend crispy), put aside to cool and place on a napkin or wrack to drain the grease off of them.

With your pan still on with medium heat, add the butter and melt.

Add spinach and broccoli, sprinkle sugar, salt and pepper on top.

Toss in pan to coat with butter, cook until spinach has wilted and broccoli is heated.  Your broccoli will still be slightly crisp.  It takes less than 5 minutes to prepare this.

Once you are satisfied with the consistency of the veggies, chop bacon into bits and toss into pan.  Cook all together for approximately one minute (that is why you want your bacon crispy, it will soften once you add it back in to the moist veggies covered in butter.

Spinach and broccoli are wonderful sources of vitamins/nutrients.

I am telling you as a former veggie hater, this is scrumptious!  This could be a meal on it’s own…especially with bacon!  I am of the school that bacon tastes great with almost everything!

TIP: Make sure your spinach and broccoli are completely dry.  If you toss them into the hot oil wet, you may create an unplanned grease popping explosion (I know this from experience)!!
