Enchilada Casserole

enchilada_casseroleCheesy, spicy goodness is what comes to mind when I think of cooking (and eating) Enchilada Casserole.  Growing up, I remember requesting this specific dish almost every time I visited my grandparent’s house for a weekend or over summer break.  It’s a comfort food that despite the decadence, you can’t stop eating because it is soooo delicious!  This is one of the first things I requested she teach me to cook.  It is one of those recipes that once you make it one time, you never forget!  This is great for a family gathering, make ahead meals, pot-luck dinners, or anytime you want something Tex-Mexy.  And one of the best parts about this?  It tastes even BETTER the next day or two because all the flavors marinate and meld.

You may see similar recipes but I’ve never seen one quite like this!  This particular Enchilada Casserole recipe has been passed down in my family for generations!  Cheesy, rich, decadent and delicious.  Others may call it a Mexican Lasagna. Ingredients you will need:

1 Pound of Lean Ground Beef
1 Pound of Lean Ground Pork
1/2 large onion
1 large jalapeño pepper
1 8 oz can of green chilies
1 10 ¾ oz can of Rotel
1 10 ¾ oz can of Cream of Chicken Soup
1 10 ¾ oz can of Cream of Mushroom Soup
1 10 ¾ oz can of Tomato Soup
½ cup of Mild (or Hot) Salsa
1 Tablespoon of crushed garlic
1 large bell pepper
1 Tablespoon of salt
1 Tablespoon of black pepper
1 Tablespoon of crushed red pepper (opt.)
1/2 teaspoon of Cayenne Pepper (opt.)
1 pkg of 24 count corn tortillas
1 Block of Monterrey jack
1 Block of sharp cheddar
