Easy, Cheesy Breakfast Burritos

If you are looking for a quick breakfast fix to grab and go, these delicious breakfast burritos will do the trick!  My mom introduced these delectable little burritos when we were kids however I’ve changed the recipe up just a little from the one I grew up with.   They are the perfect individual size and one can easily scoop one up and run out the door for a mess free, well rounded meal to start your morning off the right way.  Simple and easy, you can make these the night before and wrap them individually with plastic wrap or fit two in a sandwich bag.

Breakfast BurritosBreakfast Burrito Ingredients (makes 12)

12 Taco Size Flour Tortillas
1 dozen large eggs
1/8 cup of Heavy Cream
12 ounces of Sharp Cheddar Cheese (shredded)
1 pound of Hot Breakfast Sausage
2 Green Onions (chopped)

Brown sausage in your cast iron skillet.  Drain excess grease (do not rinse with water).  I prefer Jimmy Dean’s Hot Sausage but if you are not a fan of spicy food, you can use any type of breakfast sausage you like!

Scramble your dozen eggs in a large bowl with heavy cream. Remember, the more air you create in your eggs, the lighter and fluffier they will be!

Add salt and pepper to taste.

Chop your green onions and add to bowl of eggs.  Mix well.

Once your sausage is cooked through and the grease has been removed, pour in your egg  mixture in and cook until all liquid is firm.

Shred your cheese; layer cheese, burrito filling and another top layer of cheese and roll!!!

Wrap your individual breakfast burritos in plastic wrap or put more than one in sandwich bags.

These keep well and if you double the recipe, you’ll have enough for the week as long as you can control  yourself from making them a midnight snack!!!
