A Sweet Breakfast Treat: Cinnamon and Sugar Muffins

French_Cinnamon_Sugar_MuffinsI love to bake, and I especially love to bake muffins.  I love the delicious aroma that fills the air when baking.  It reminds me of being home with family or the holidays! There is something special about having a delicious little individual sized baked good that you can grab and go!  I’ve seen similar recipes to this however I thought I’d give these cinnamon sugar muffins my own little twist. These muffins are sweet and tasty, a perfect breakfast food to accompany my cup of coffee!  They sort of remind me of snickerdoodles, but wrapped up in the guise of a delicious muffin.  So let’s get down to it…

For these amazing cinnamon and sugar muffins, you will need:

3 cups of all purpose flour
3 teaspoons of baking powder
1 teaspoon of salt
1/2 teaspoon of nutmeg
2/3 cup of Crème fraîche
1 cup of sugar
2 large eggs
1 Tablespoon of vanilla extract
1/4 cup of milk

Cinnamon/Sugar Coating:

2 cups of sugar
2 cups of butter (melted)
Cinnamon (to taste)

Preheat your oven to 350 degrees F.

You will need 4 bowls: 1 large mixing bowl, 1 medium sized mixing bowl and 2 smaller bowls for your cinnamon/sugar mixture and melted butter.  You will also need a mixer. (hand or stand) Don’t forget your muffin tin!

This recipe makes 12 medium sized muffins.

In your medium sized mixing bowl, combine your dry ingredients: flour, baking soda, salt and nutmeg. Stir to incorporate.

In your larger mixing bowl, cream together your Crème fraîche, sugar, vanilla and eggs (1 at a time).  Use your mixer to do this.

Once your wet ingredients are incorporated, alternate mixing your dry ingredients and milk into your creamed Crème fraîche mixture.  You want to put in your flour mixer a little at a time to ensure your dough has no lumps.  Once fully mixed, your dough will be quite thick.

Retrieve your muffin tin and either use cooking spray or butter and flour to coat the pan so your muffins do not stick.  I then use my 1/4 measuring cup to place the dough in the muffin tin.

Place your muffins in the oven and bake for approx. 20 – 25 minutes.

Once your muffins are ready, remove them from the oven and place on a wire rack to cool enough for you to coat them in first the butter, then the cinnamon and sugar mixture.  You want your muffins to be very warm when you perform this step.  Coat them completely with the butter, which will soak in a little and then again with your sweet mixture.  Set them back on the wire rack and let sit for 20 minutes (if you can wait that long)!

I am warning you now…these are addictive!  And what makes them dangerous, they are SO easy to make!  Leave the pre-made muffin mixes at the store, this one is a WINNER!
