Chicken and Rice

A Tasty, Simple Chicken and Rice Recipe

Chicken and rice is a staple meal in my family.  Everyone makes it their own little unique way and each recipe is absolutely delicious! My favorite is my grandma, Margaret’s, recipe!  I’ve tried to duplicate it and I’ve come close, but it never tastes as good as when she makes it!  One day, Nenaw… one day I will make it like you do!

I probably make chicken and rice at least 5 different ways and this particular recipe I’m sharing below is tasty and easy to make!  It takes about an hour to prepare from start to finish… prepping included.  I combine lots of spices and fresh parsley to make this dish absolutely fabulous!

Chicken and RiceChicken and Rice Ingredients:

32 ounces or Organic Chicken Broth
2 large boneless Chicken breasts
2 cups if Jasmine Rice
1/2 small red onion (chopped)
2 cloves of garlic (minced)
1 Tablespoon of Cajun Seasoning
1 Tablespoon of Lawry’s Seasoning
Salt (to taste)
Pepper (to taste)
1/4 cup of fresh Parsley (minced)

I use my cast iron dutch oven to cook this on the stove.  The wonderful thing about a dutch oven is that it is versatile.  You can either cook with them on the stove or in the oven.  The rice cooks perfectly and the moisture does not evaporate…the flavors that come out of the food are spectacular!  If you do not have a cast iron dutch oven, I would recommend getting one!  I use mine ALL the time for dozens of different dishes.

Set your cast iron dutch oven (or any other medium sized pan) to medium heat.  Pour your chicken broth in and bring it to a boil.  Place your chicken breasts in the broth and add your Cajun seasoning, salt, pepper and minced garlic. Cover with lid.

15 minutes after you cover, add your chopped onion.  Cover and cook for another 15 minutes.  This should allow your chicken to cook all the way through.

Remove your chicken.  Add your two cups of rice to the broth, set your fire to low.  Cover to let simmer and steam.

Chop your chicken into bite sized pieces.  Add your chicken and parsley once your rice is half finished.  Stir and replace lid, cook until rice is tender. (Should be about 20 minutes)

I served sugar peas with this meal.  They are super simple to prepare.  I washed them, put them in a microwave safe bowl, put two Tablespoons of butter on top, sprinkled with salt, covered the bowl with plastic wrap and placed in microwave for 3 minutes.  They will come out deliciously steamy and crunchy!
