Cheesy Chicken and Broccoli Casserole

Get ready for a mouthful of heaven when you bite into this AMAZING Chicken and Broccoli Casserole!

I love a good casserole… a one dish meal that is simple and divinely tasty.  And that is EXACTLY what you’ll get when you make this easy, cheesy chicken and broccoli casserole recipe.  10 minutes of prep time and 1.5 hours in the oven and boom…a delicious meal that you, your family or friends will gobble up. This recipe was taught to me by my Mom.  She makes it every holiday, minus the chicken.  It is a side dish that is devoured at family gatherings within minutes and there are NEVER any leftovers. When I learned how EASY this was to cook… I decided that for me, it is a more than a once or twice a year kind of dish.

I added boneless chicken breasts so that it could be a one dish meal that I could easily throw together when I got home from work and enjoy a satisfying meal within a few short hours.  Don’t let the multiple hour thing deter you from cooking this anytime, because it is so simple to put together, once it is in the oven, you can relax with a good book, browse online or catch up on your favorite cooking show!

For this cheesy chicken and broccoli casserole recipe, these ingredients are needed:

chicken_broccoli_cheese1 pound of boneless chicken breasts
1 jar of Cheeze Whiz
1 12 oz package of frozen broccoli florets (or two fresh bundles chopped)
1 small onion (chopped)
1 can of Cream of Chicken Soup
1 cup of instant rice
1 cup of milk
Seasoned salt (I love Lawrys)

Preheat oven to 350 degrees.

Chop your onion, season and prepare your boneless chicken breasts. (Lawry’s, a little more salt, pepper and paprika) and set to the side.
Butter the sides of a 9×13 oven safe casserole dish.
In the casserole dish, mix your broccoli, rice, cream of chicken soup, cheeze whiz, milk, onion and salt and pepper.  Stir until thoroughly combined.
Place chicken on top.  You can either cook the whole breasts or chop into smaller pieces like I did in the above picture.
Cover dish with foil and bake in oven for one hour.
After one hour, remove foil and continue baking for 30 more minutes until top and chicken is lightly browned.

I double this recipe when I have guests over for dinner or if you just want leftovers to enjoy later.  This casserole holds well.  This is one for the casserole record books!  Tastes like you spent hours slaving in the kitchen when all you have to do is throw it together in 1o or 15 minutes, put it in the oven and let it bake!

Don’t forget…my Mom’s original recipe is minus the chicken and is a side dish, so it is versatile as an entre or side.

On a side note, my boyfriend saw me typing this blog and he requested that I make this meal SOON!  It has become one of his favorites and I know it will be one of yours.
