Cheesecake… Decadently Delicious!

For me, it’s being a kid and looking forward to special occasions and holidays when my Mom would make this simple, delicious dessert.  It’s sort of a cross between pie and the usual cheesecake recipe we all know and love.  Mom is probably one of the best cooks I’ve met, and I’m not saying this because I’m biased…she is a master baker and I can’t wait to share more of the delicious recipes I’ve learned from her through the years. I request it every time I travel home for a visit, even though I make it myself.

This is a dessert that people will always request, and once requested, you, as the one preparing it, will be relieved because it really is THAT simple to make.  It literally takes 20 minutes to throw this treat together,  and it is like sweet torture because you must wait for it to chill and set in the fridge before being able to take that first creamy bite.

Get ready to become totally addicted to this dessert… and your family/guests will love it too!  It is actually my personal favorite and I know it will become yours too!  This cheesecake recipe is so good that it rivals the Cheesecake Factory! And the graham cracker crust…divine! I also love that you only need ONE block of cream cheese.

For this cheesecake recipe, you will need these yummy components:

For the filling:
16 oz block of cream cheese
14 oz can of sweetened condensed milk
the juice of 2 large lemons
1 Tablespoon of Vanilla
Large mixing bowl
Stand or hand mixer

For the crust:
1 and 1/4 cups if graham cracker crumbs
1/4 cup if sugar
6 Tablespoons of melted butter or margarine (I prefer butter)
Medium sized bowl for mixing ingredients
9 inch spring form pan

For the topping:
Fresh fruit of your choice (I prefer strawberries, blackberries or raspberries)

FIRST, set your cream cheese out with enough time to bring to room temperature.
NEXT, make your crust.  This crust is dense and deliciously buttery.

Preheat your oven to 350 degrees F.

Mix your graham cracker crumbs, sugar and melted butter with a fork.
Pour into spring form pan and press down to fill bottom evenly with your hands.  I would recommend buttering your hands to make this process easier, PLUS… more butter always tastes better!
Bake in the oven for 5 to 10 minutes, depending on how crispy you want it. Take out and place in refrigerator until you are ready to fill.  I suggest you let it cool completely before mixing the filling together.

Now it is time for the magic!  Retrieve your softened cream cheese, place in large mixing bowl and add sweetened condensed milk, lemon juice, and vanilla.  Mix with hand mixer until light and fluffy! YUUUMMM
Pour the  filling into the spring form pan, cover and put back into the fridge for at least 2 hours for the filling to set and chill completely.

When you are ready to serve your cheesecake, top with your favorite fresh fruit or pie filling (I suggest cherry).

On a side note…. lick the cheesecake filling out of the bowl, this guilty pleasure is totally worth it!

  1. I absolutely LOVE cheesecake and anything that includes a cheesecake! I’m pinning this onto my …but of course, “Cheesecakes” board! Loving this recipe! (Easy, and it has my favorite ingredient that I could seriously grab a straw and drink it from the can…sweetened condensed milk!)
