Blueberry Muffin Madness

I absolutely love anything with blueberries…

…muffins, cookies, breads, cobblers…everything!  A funny quirk is I’m not crazy about them uncooked.  Something magical happens when a blueberry is heated and the sweet berries bursts, the juice bursting out…seemingly becoming sweeter and richer in texture.  With all this said, I am constantly looking for the perfect blueberry muffin recipe.


In my search, I’ve tried everything from the Jiffy mix and adding fresh blueberries to many different “from scratch” recipes.  My absolute FAVORITE blueberry muffin is the one from

Le Pain Quotidien.  It is dense and tastes almost like a mixture of muffin and bread. (Hmmm, gives me an idea for an experiment!)

My most recent muffin experimentation was with a recipe from Smitten Kitchen… a food blog that I absolutely LOVE!  One of my favorite things to do is find a recipe online that looks great and make it my own by adding to or substituting something in the recipe.

In their blueberry muffin recipe, I substituted the plain yogurt for Vanilla Greek yogurt (because that’s the only kind of yogurt I had in my fridge) and added a teaspoon extra of lemon zest to give the cupcakes an extra lemony kick.  I guess you could say that these were Lemon Blueberry muffins because I could taste the strong hint of lemon and my boyfriend gobbled them up!  He is a lemon anything pastry junkie.

I also use organic blueberries and as unprocessed raw ingredients as I can find.  Those that do not use organic fruit… you are missing out!!!  The flavor, texture, everything about them equals absolute heaven in your mouth.blueberry_muffin_batter

I figured that using yogurt would make for a thicker, denser batter, and of course, it did.  It was thicker than a brownie batter so I wondered if the muffins were going to be dense or light and fluffy and to my surprise… they were right in between the two.

This from scratch blueberry muffin recipe was simple to put together and super quick!

That always makes me happy when cooking the old-fashioned way because those who cook like this know…when cooking with unprocessed foods; it can take some time!

I’d like to experiment with this recipe one more time…instead of using the Greek yogurt, I’d like to use regular yogurt as the recipe called for just so I can give a completely accurate “review” of this recipe.  My sensitive taste buds could taste the yogurt in the finished product and I like my flavors to meld, creating the perfect blend for an exquisite blueberry muffin recipe and I’m not sure if it is because it held the strong flavor of the Greek yogurt of if that is a regular occurrence when substituting yogurt for oil when baking.

I really enjoyed their take on a blueberry muffin recipe.

I will continue my search for a recipe that are similar to the bread-like muffins from Le Pain (even if I have to create it myself).
