Blueberry Biscuits

Blueberries… little morsels of fruit that burst with rich juice when baked!  Because of their juicy goodness, I am always looking for new ways to bake them.  I wanted to see if I could pull off baking them in a biscuit, just as you would a muffin and I have to admit, they were pretty darn good! Blueberry biscuits, who knew?  I made them without a glaze ad although they were scrumptious, the NEXT time I make them, I will drizzle vanilla glaze on top.

This recipe is super simple and quick.  I was in a little bit of a hurry so I used my trusty Pioneer Baking mix to make the biscuits and the blueberries.  THREE INGREDIENTS!!  So worth the minimal effort, haha.

I will be trying this with my homemade biscuits soon!

4 cups of Pioneer Baking Mix (Or Bisquick)
1 and 1/8 cup of Milk
1 and 1/2 cups of Fresh Blueberries

Vanilla Glaze:

1/2 cup of powdered sugar
1 tsp of vanilla
1 tsp of cream

*TIP: Mix you blueberries in with your dry baking mix first, THEN add your milk.  This will keep the blueberries from sinking to the bottom of your biscuit.

Preheat your oven per the directions on your baking mix.  Combine your mix, blueberries and milk.  Gently stir.

Generously flour a cutting board or other surface, gently press your dough  until it is about an inch thick and cut your biscuits with a biscuit cutter to your desired size.  I use the medium sized one. (If you are really in a hurry, no need to roll them out… just prepare them like drop biscuits!)

Bake!!! After your biscuits are ready, let cool for 15 minutes.

Prepare your glaze.  Combine the powdered sugar and vanilla and add cream slowly until you have reached your desired glaze consistency.  Drizzle over the top of your blueberry biscuits.

Enjoy for breakfast!!!  Or anytime if you’re like me.  These would be perfect with bacon and eggs!
