Bacon, Egg and Cheese Biscuits

Saturday Morning Delight! Bacon, Egg & Cheese Biscuits!

You are laying in bed and the  sun is starting to drift in.  You are warm, cozy and enjoying your Saturday morning attempt to sleep in…then you smell it.  The delicious aroma of bacon filling the air mingled with the scent of fresh brewed coffee.  Next thing you know, you are out of bed and HUNGRY!!!  Wouldn’t you love for your significant other, kids, friends or family to wake up in the morning this way?  They can, with this delicious breakfast of bacon, egg and cheese biscuits!

For this you will need:

Baking Mix (I prefer baking powder biscuits made from scratch {recipe coming soon} but when I am in a hurry…Pioneer Baking Mix or  Bisquick)
8 Large Eggs
1/8 cup of milk plus milk for the baking mix
2 Tablespoon of Butter
1/2 block of Sharp Cheddar Cheese (Grated)
1 package if thick cut Applewood Smoked Bacon
1/8 cup of milk
Salt & Pepper (to taste)

Prepare your baking mix as directed on the package for the biscuit recipe.  I double what is called for to make large biscuits.  Sprinkle a little flour on your rolling surface and your rolling pin and roll your dough out to 1/8 an inch thick.

Cut your dough, I use the largest size cutter.  You should have 16, 1/8 inch biscuits.

Layer your biscuits… one on top, and one on the bottom.  This will make is super easy to pull apart when it is time to build your bacon, egg and cheese biscuits!  Set to the side and preheat  your oven as directed on the baking mix package.

Cut your bacon strips in half.  Once skillet is heated evenly on medium heat, get to cookin’!  When starting your 2nd round of bacon, place biscuits in oven.

While your second round of bacon cooks on medium heat, grate your cheese!  Do NOT use prepacked grated cheese from the store.  When you grate your own cheese, it is moister, tastes better AND it melts better!  Put to the side.

Whisk your eggs, 1/8 cup of milk and salt and pepper until completely incorporated and cook in a buttered (1 Tablespoon of butter) skillet over medium heat.

Top scrambled eggs with the grated cheese.  The eggs will sort of “stick” together and the cheese helps this process as well.  Cut the cheesy eggs to fit on your biscuits, which should be finished by now.

Remove your biscuits from the oven and spread butter over the tops of the hot biscuits.

Pull your biscuits apart, layer your cheesy eggs and bacon on the bottom half and place the top back on!!

Boom!! You’ve got homemade, delicious bacon, egg and cheese biscuits and you didn’t even have to waste your money at a fast food joint!!!
