Bacon and Eggs Breakfast Mix!

Bacon and eggs for breakfast… need I say more?

bacon_eggs_breakfast_mixI love a quick, simple and easy breakfast that satisfies and gives you time to spend your remaining “free” time however you’d like to spend it.  I especially love ANY breakfast that involves bacon and eggs.

One of my favorite meals that I whip up on occasion for breakfast is something I’ve named “Breakfast Mix”.  Others call it fried rice, I just call it yummy!  The reason I do not classify it as a “fried rice” dish is because I don’t really cook the rice in the traditional “fried rice” way.  I simply mix all the ingredients together with some Cajun seasoning and salt and pepper and presto, I have a mouthwatering breakfast.

This has become a favorite in my home and always fills the air with the delicious aroma of bacon and puts a smile on the face of anyone who eats it!

There are a few simple ingredients in this bacon loaded recipe…

Ingredient list and instructions:

1 pkg Bacon (fried of baked)
1.5 cup of rice (prepare as package directs)
8 eggs (scrambled)
1/8 cup of milk
Cajun Seasoning
1 green onion (chopped)

Bring water to boil for rice and cook until done.
Fry (or bake on a foil lined cookie sheet) bacon and place to side on paper towels to drain grease.
Pour out bacon grease and wipe down the cast iron skillet you fried the bacon in and use to cook your eggs (great flavor)!
*TIP: Your skillet will be lubricated by the bacon grease enough that your eggs will not stick.
Scramble all 8 eggs together in a large mixing bowl, add milk, salt and pepper to taste.  Pour in skillet set on medium heat.
When eggs are almost finished, add green onion and cook together.
Once eggs are done, pour cooked rice on top and sprinkle Cajun seasoning and salt and pepper to taste.
Crumble bacon over the top and mix together.

I like to add a side of fruit to balance out the meal… a bit of healthy with the decadence of the breakfast mix.

Serve as breakfast or as a side dish for other meals. Can feed 4 to 6  people… 2 to 4 hungry ones!
